Nonpareils
are medium-sized uniform kernels with light colored skins.
They have relatively smooth exteriors with a classic oval shape. They
are a standout variety in California.

Carmels
have darker brown skins and elongated kernels. They are richer in
flavor than the Nonpareil. They have deeper wrinkles
on the exterior, and are well-suited for roasting.
